Berry soup. / Kiisseli.


Berry soup just does not sound right....
In finnish we have a name for berry soup, kiisseli.
Much better. Soup sounds salty. Please correct me
if I´m wrong and there is a name for it in english.

Because the Hubs and I are getting old, we forget
things....like in this case, some amazing frozen berries
on the garage floor in a grocery bag. Yesterday.
Blueberries and strawberries.
So when I found them today, they were still a little cool,
but most definitely not going back to the freezer.

Kiisseli it is! Cook the berries until they boil.



Add honey.



In the finnish recipe for kiisseli, potatoe flour is
added to thicken the soup, but I don´t need to
since I´m using a hand blender.



Add some grated lemon peel.



And some lemon juice.


















Add a swirl of cream.....ai, ai, ai.....soooo good.
I don´t know why I don´t make this more often,
so very good and so very healthy, great before
a cold season, all that vitamin C.

Couscous.

"Easy like sunday afternoon..." Miss Luna knows how
to relax!

Made couscous with salmon tonight. Recipe in the end.



Melt the butter in the boiling water.



Add the couscous, cover tightly.



Wait 5 min and add the sauce.




Yogurt, olive oil, white wine vinegar, curry, turmeric,
salt and black pepper.

Add the other incredients. Carrots, parsley, dried currants,
almonds, scallions and red onion. Mix.



Enjoy!



Really good and the salmon goes so well with this!


For dessert.....vegan brownies from PCC, I must get
the recipe for these!!!!!!!!

I just added the grilled salmon chopped. Bon appetit!

Crepes.

Grate carrot & zucchini.






Squeeze the liquid out of them with your hands.



Mix the dough from 3cups milk, 2cups flour, four eggs,
1 teasp. of salt & sugar, 1cup of whole oats, 1/2 cup carrots
and a cup of zucchini.






Little butter on the skillet...





Some cinnamon & sugar.



Or even better, some honey, mmmm...





Almost vegan.

These were the best english muffins ever!

Vegan bacon, vegan cheese, tofu with 2 egg whites and
pesto, english muffin.



"Bacon" cooking.



I wanted to "tie" the tofu together, so I used two
eggwhites. There goes vegan.... must find out
what a vegan would have used to "tie" the tofu
together...perhaps they would have never broken
the tofu apart....  :-D


I have to say, I did not expect this to be good!
I tought it´s silly to have vegan cheese and this and that.
Well, I was as wrong as one can be, it was amazing!
Tofu made it all juicy and bacon & cheese added
salty & creamy, pesto is just good. Hubs and I both
marveled at how good we felt after too, no regular
bacon salt thirst, just happy tummy´s ! I´m a beliver.

Lunch in Edmonds.

We went for lunch in Edmonds, restaurant

I had crilled cheese and tomatoe bisque....mmmmm!



And since I´m trying to lose some pounds,
I naturally had to have dessert   :-I
